How to Cook
Steamed: score the body, tuck in ginger and scallion, steam over high heat for 8 minutes, then finish with seasoned soy and sizzling oil. Red-braised: sear both sides until golden, then braise with soy, sugar, rice wine and a splash of stock for 10 minutes until the sauce clings. Pan-fried: salt for 15 minutes, then fry until both sides are crisp and deeply golden.
Storage
Keep at -18C or below for up to 12 months. Thaw slowly in the refrigerator for 4-6 hours and cook within 24 hours. Do not refreeze.
